Who would have thought we could grow such beauties in our garden this summer?!?!!? If you have trouble keeping things alive….I’m here to offer hope to you!! hahahahaha We made this Summer Pickles recipe from our garden a few weeks ago and they turned out delicious!!!!
In terms of my green thumb…I was a lost cause….and I think my ferns on the front porch are testimony that I’m still a work in progress because they are a little “crispy” as we speak. But our garden this summer has produced quite a bounty of summer vegetables!!
So here’s the recipe that we used…it was modified a bit and you could always tweak it as you like.
2qt water
3/4 qt vinegar (apple cider)
1/2 cup salt
1 clove garlic (minced)
1 tbsp. whole peppercorns
dill (as much as desired)
cucumbers
canning jars
Cut up cucumbers and place in canning jars after they’ve been prepared for canning. We put ours in the dishwasher to clean them and heat them up…along with the rings and lids. Keep them hot in the dishwasher until you are ready to put cucumbers and vinegar mixture in the jars.
Heat all ingredients except for the cucumbers on the stovetop. Pour the mixture over the cucumbers in the jars and seal.
My mom and my friend Christy came over to help me with their canning experience….because hello…I had NONE!!!! We had the best time and we made quite a few jars. I even shared with them! hahaha But it was neat to do this and hear those lids pop as they began to seal themselves!!! Music to our ears…and our tummies!!!
