Several of you asked for some of our Family Faves for quick weeknight recipes….and I’m happy to share them with you!!! If you ever want to know something… just ask!!! I’m an open book. And if something I know can help you or save you a step…I’m all about it!!!! These are great especially if you are a busy mama who may have a hubby out of town (or if you’re a milspouse…out of the country) or if you are a young woman starting out and want to learn how to cook for yo-self! 🙂
So one of our go-to sides is garlic potatoes. We are a family who tries to limit the amount of gluten we eat and are even cutting back our grains because we have auto immune and thyroid issues. Potatoes are still a starch…however, they aren’t a grain and don’t have any gluten…so we will have them usually once a week.
Our fave recipe is this:
1 bag of small red potatoes (new potatoes)
olive oil
2 fresh rosemary sprigs or a handful of dried rosemary
1 tablespoon of McCormick’s Himalayan Sea Salt w/ garlic and black pepper
I wash the potatoes, place them in a microwave safe glass dish, and prick each potato with a fork or small knife. Then I use the potato sensor on my microwave to cook them. I cook mine whole, don’t cut them yet. If you don’t have a potato sensor, try it for 3-4 minutes and test for doneness. Let the potatoes cool to the touch and heat a few tablespoons of olive oil in your heated pan on med. heat. Here is a link to the pan I use from Green Life.
Make sure you don’t use metal spatulas on your ceramic or non-stick pans. Here are some choices that I love!!! Wooden Ones and Silicon Ones
Sprinkle with the McCormick seasoning and chopped up Rosemary as you begin to cook them. I pan fry them until they are golden brown and yummy!!!
